Ingredients:
10 eggs
4 bananas
1/2 cup blueberries
1/4 cup shredded coconut
4 packets stevia or trivia (optional)
4 tbsp cinnamon

Directions:
1. Preheat the oven to 365 F
2. Add the ingredients to the blender in this order: 4 chopped bananas, 10 eggs, 1/4 cup coconut, 1/2 cup blueberries, 3 packs of sweetener (optional) & 3 tbsp. cinnamon. BLEND

3. Once blended pour into pan (I used a 9×13).

4. Bake at 365 for 35-40, minutes or until the center is firm!
5. Once firm let cool for 15-20 minutes.
6. Cut & Enjoy!

Ingredients:
1 sweet potato
1 egg
About 1.5 cups almond flour
Sea salt
Garlic powder
Olive oil

Directions:
1) Wrap the sweet potato in a wet paper towel & cook in the microwave for about 4-6 minutes or until soft.

2) Scoop the cooked sweet potato out of the skin, add 1tbsp garlic powder, sea salt & mash together with a fork. Flatten them out on a plate about a half inch thick.

3) Set to cool in the fridge for about 5 minutes so you don’t burn your hands.

4) With your hands, roll the mashed sweet potatoes into little “sticks” (whatever size you prefer). Set to cool for about 5 minutes.

5) Put 1.5 cups almond flour on a plate & a whisked egg in a bowl for dredging.

6) Dip each of the Sweet Potato sticks in the whisked egg & coat in almond flour.

7) Pour enough olive oil In a pan to cover the bottoms of the “sticks”. Place over medium heat.

8) When the oil is ready (toss ONE TINY DROP OF WATER in the oil, if it pops a little it’s ready) put the coated Sweet Potato Sticks in.

9) Cook until golden on all sides. Place on paper towels to cool.

10) Add them to a meal or use as an appetizer with your choice of dipping sauce! ENJOY

Ingredients:

3 eggs

1.5 ripe bananas

1 pack Truvia or Stevia

1.5 cups fresh spinach

1 tbsp cinnamon

olive oil (to coat the pan)

Serves 2 but I’m greedy… Do as you please!!

Directions:

1) Mash 1.5 bananas in a bowl with a fork.

2) Add the mashed banana, 3 eggs, 1 tbsp cinnamon, a pack of Truvia 0r Stevia and about 1.5 cups fresh spinach (no stems) to the blender in that order. BLEND UNTIL SUPER SMOOTH!

3) Coat a pan with olive oil and cook the Shamrock Pancakes until golden. They should be easy to flip.

4) Stack them & make sure they’re sexy!!!!

5) Once they’re stacked, top them with whatever you chose. I topped mine with warm apples & a side of nitrate free BACON!

 

sweet potato sandwich

Ingredients:
Sweet Potato
eggs
Bell pepper
spinach

Directions:

1. Wrap a sweet potato with a wet paper towel & cook it in the microwave for 5-6 min. You want it easy to cut through but not fully cooked.
2. Slice the sweet potatoes to your preferred thickness. The thinner they are, the firmer they will be.
3. Coat a pan with olive oil and place over medium heat.
4. Cook the sweet potato & pepper slices in the same pan. The sweet potatoes will be done when they have slightly golden marks on them (top & bottom). Cook the peppers until soft.
5. Once done, place them on a paper towel to absorb some of the oil.
6. In another pan fry 2 eggs to your liking (a little yolk is SO good).
7. Once the eggs, sweet potatoes, and peppers are done… construction begins.
8. DON’T forget the spinach!
9. ENJOY!

On the Go

I was running a tad bit late to work this night. I finished cooking and literally could not find a piece of Tupperware that matched to save my life!!!! I said screw it and made a “Bag o’ Paleo” for dinner at work. Never make an excuse to go unprepared!! Preparation is key!!

I’m definitely a pizza head and once in a while I need my fix. This was no Pepe’s but it definitly did the trick!

Feel free to add whatever else you want to this thing… chicken, bacon, tomatoes, whatever… get creative.

Ingredients:

  • 1 can crushed tomatoes
  • 1 red pepper (sliced)
  • 1/4 cup grated cauliflower
  • onion (thin slices)
  • 1/2 tsp garlic powder
  • salt pepper
  • basil
  • baby arugula  or spinach
  • 3/4 cup almond flour
  • 2 eggs (1 whole 1 white)
  • olive oil

Directions:

1. Preheat the oven to 400F

2. In a bowl combine 3/4 cup almond flour, 1/2 tsp garlic powder, 1 whole egg, and 1 egg white. Mix well with a spoon.

3. Rub a little bit of olive oil on a large sheet of foil. Dump the “dough” on the foil and get it into whatever shape you choose.

The “dough” is hard to get leveled but be patient.

4. Place the crust in the oven ALONE for 5-6 minutes.

5. In a pan over medium heat drizzle in some olive oil and throw in the sliced peppers, sliced onion, and grated cauliflower. Cook them until tender.

6. Once the crust has been cooked for 5-6 minutes and the veggies are tender construct you pizza how ever you want.

Once constructed drizzle with olive oil and brush the outer “crust” with olive oil too.

7. Place back in the oven (400F) for 10 minutes or until the crust is golden.

Once golden take the whittle baby out, slice & enjoy!

I can pretty much eat breakfast for any meal. These are really fast and are perfect if you’re always on the go. I woke up in a good mood and decided to actually make breakfast this morning. I usually just grab some fruit & nuts. So… take advantage of my sleepy morning recipe!

Side note: Unless you have diabetes, hypertension, or cardiovascular disease I don’t want to hear shit about the yolk!! It’s full of nutrients, so eat the damn thing. 

Ingredients:

  • 6 eggs
  • 1 avocado
  • Nitrate free ham
  • Cayenne pepper

Directions: 

1) Preheat oven to 400F

2) In a muffin tin or a cupcake tray line however many “breakfast cupcakes” you plan to make with a cupcake liners.

3) Fill each liner with a slice of ham and a slice of avocado.

4) After the ham and avocado are in crack an egg in each of the cups.

5) Place in the oven for 20 minutes. The whites sound be firm to the touch.

If you don’t want the yolk to be too firm cook for about 15-16 minutes.

6) Once the sexy beasts are done sprinkle a little bit of cayenne pepper on top for a little kick!

Sometimes you have to eat like a baby beast in order to reach you goals!

The biggest mistake people make while trying to “get into shape” is drastically reducing calories. This will help to lose weight for a short amount of time but eventually the weight loss will plateau. In order to lose fat and maintain lean mass you have to eat! Point blank!

It’s October & I have a sick fetish for anything pumpkin or apple. I feel like I’ve been missing out because of this paleo challenge I’ve been doing for the past 3 weeks, 3 day, 12 hours, 17 minutes, & 30 seconds.. I’m not counting down or anything.

Anyways, I’m allowed ONE protein shake/day within 30 minutes of my workout… Might as well make it a good one.

Ingredients:

  • 1-2 packs Truvia or Stevia (your preference)
  • 1 cup unsweetened almond milk
  • 1/2 cup pumpkin
  • 1 tbsp cinnamon
  • dash of nutmeg
  • 1 scoop protein (Chocolate or Vanilla)
  • 2 cups ice

Directions: 

In this order, add to the blender

  1. 2 cups ice
  2. 1 cup almond milk
  3. 1/2 cup pumpkin
  4. 1 scoop protein
  5. 1-2 packs Truvia or Stevia
  6. 1 tbsp cinnamon
  7. dash of nutmeg
  8. If you don’t like your shakes thick like me open the lid while everything is blending and pour in a little more almond milk. You should be able to see the consistency change to your liking. BOTTOMS UP!

BLEND UNTIL IT’S SMOOTH LIKE BUTTER.

This is a super simple mini recipe that I threw together one night.

It reminds me of the vacation i took to South Beach, FL in May… EXCLUDING the rum, AND the sand, AND the boobies… dumb.

Anyways, this is much healthier for you…

  • 1/2 juiced lime
  • 1-2 packets of truvia
  • 2-3 ripped mint leaves
  • 24oz cold water
